I have never experienced aeration problems with DOT 5 & use it on every rebuild.
Vacuum bleeding helps rather than pumping the pedal.

Has your engine been dusted [run with no air cleaner]? This is indicated by the compression wet test....provided the initial test was done correctly.
Vacuum gauge readings are a very good indicator ...
