Im getting ready to order paint for my M38. How much paint should I expect to use? I will be painting everything, tub(top and bottom), fenders, hood, tailgate, winshield frame, etc.

Not sure how much if you do it by brush, but by spraying two gallons will give you enough to do the job and some left over for touch-up, gas cans, friends parts (once they find out you have OD paint),etc. If you are starting from bare metal get a good quality primer. I used a two part epoxy primer for the big pieces and cans of self-etching priner for the small stuff.

2 gallons is about right. Depends on your paint gun and the pressure it is set at.

Id recommend POR-15. Its pretty expensive, but is tough as nails.
I painted POR15, Red Oxide, then OD on everything. If you dont do everything in it, Id still highly recommend the wheel wells.
